IRISH DELIGHT March 17, 2010[/b]

Crush 18 Oreo cookies Spread in bottom of greased 9” x 13” pan. Melt 40 large marshmallows in ½ cup of milk. Cool. Add 8 tbsp of green Crème de Menthe. Beat 1 pt of whipping cream until stiff. Fold into marshmallow mixture. Put into pan. Crush 9 more cookies and sprinkle over. Freeze and serve frozen Submitted by one of our talented Valley cooks.

Zucchini Soup March 18 2010

ZUCCHINI SOUP

1 medium onion
1 clove garlic, minced (or ½ tsp. garlic powder)
2 tbsp butter
1 tbsp vegetable oil
6 medium zucchini, trimmed and sliced
1 tbsp flour
1 tsp salt
½ tsp pepper
5 or 6 cups chicken broth

Fry onion and garlic in butter and vegetable oil. Add sliced zucchini. Cook gently, covered, for 10 minutes. Stir in flour, salt and pepper and cook for 2 minutes. Add chicken broth. Boil slowly for 5 minutes. When cool blend in blender.
Good served hot or cold, with sour cram and chives as a garnish.
