1 C butter
1 C white sugar
1 C brown sugar
1 egg
1 ½ C flour
1 ¼ C rolled oats
½ tsp. baking soda
1 tsp. baking powder
1 C coconut
Cream the butter, sugars and egg. Combine the flour, baking powder, baking soda, rolled oats & coconut and add to the butter mixture and mix well. Form the dough into small balls and place on parchment lined cookie sheets and press down with a fork. Bake at 375°F for about 8 – 10 minutes.
