Corn Muffins

1 1/4 cup all-purpose flour

1 cup cornmeal

1/4 cup granulated sugar

4 tsp. baking powder

1/2 tsp. salt

1 egg

1/4 cup cooking oil

1 cup milk

Measure flour, cornmeal, sugar, baking powder and salt into large bowl. Stir together. Make well in the centre. Beat egg in small bowl until frothy. Mix in oil and milk. Pour into well. Stir just enough to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full. Bake in 400°F oven 20 to 25 minutes. Leave in pan 5 minutes then remove. Serve warm. Makes 15.
