Pineapple Cake

1 can crushed pineapple

½ cup white sugar

2 tbsp cornstarch

1 egg

1 ¾ cups rolled crackers

1/2 cup brown sugar

1/2 cup flour

1/2 cup coconut

1 cup butter

Mix the first 4 ingredients in a pot and cook until thickens.

Mix together next 5 ingredients. Sprinkle approximately

2/3 of this crumb mixture on bottom of well greased 9X13

inch pan. Spread cooked filling over top and cover with

remaining crumbs. Bake approximately 40 to 50 minutes

at 350° F.
