Pineapple Date Bread


2 cups flour 1/2 tsp.vanilla

3 level tsp. baking powder 2 eggs, beaten

1/2 tsp. salt 1 cup chopped dates

3/4 cup sugar 1/4 cup shortening

3/4 cup crushed pineapple,drained


Sift flour, baking soda, and salt. Cream sugar and shortening in a separate bowl, and add vanilla. Add beaten eggs and mix for about 2 minutes. Fold in pineapple. Add flour mixture a little at a time and stir well. Lastly, add dates. Pour into a well greased loaf pan and bake at 350ºF for 1 1/2 hours, or until done.
