- German Chocolate Fudge
Ingredients: • 2 cups semisweet chocolate chips • 12 squares German sweet chocolate • 1 (7 ounce) jar marshmallow creme • 4 1/2 cups white sugar • 2 tablespoons butter • 1 (12 fluid ounce) can evaporated milk • 1/8 teaspoon salt • 2 cups chopped pecans Directions: 1. Combine chocolate chips, German sweet chocolate and marshmallow creme in large bowl. 2. Combine sugar, butter, evaporated milk and salt in heavy skillet. Bring to a boil over medium heat. Cook for 6 minutes, stirring constantly. 3. Pour hot syrup over chocolate mixture. Stir with wooden spoon until smooth. Stir in pecans. 4. Spread into buttered 10x15 inch pan. Let stand until firm; cut into squares.

salt pork turnips carrots potatoes cabbage Soak large piece of salt pork in cold water overnight. Inthe morning place fresh water in the pot and boil salty pork for about 45 minutes. While that is boiling prepare your vegetables. Cut turnips into small squares, carrots, potatoes and cut up cabbage. Add vegetables to boiling pot, first turnips, carrots and cabbage and lastly potatoes, allowing 15 minutes for each vegetable. Cook until the potatoes are done. Use any amount of vegetables to fill the need of any number of people.
- Fettuccine with Sweet Pepper-Cayenne Sauce
Ingredients: • 12 ounces dry fettuccine pasta • 2 red bell peppers, julienned • 3 cloves garlic, minced • 3/4 teaspoon cayenne pepper • 1 cup reduced fat sour cream • 3/4 cup chicken broth • 3/4 cup grated Parmesan cheese • salt and pepper to taste Directions: 1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes; drain. 2. Meanwhile, spray cooking oil in a large skillet and saute red bell peppers, garlic and cayenne pepper over medium heat for 3 to 5 minutes. 3. Stir in sour cream and broth; simmer uncovered for 5 minutes. Remove from heat and stir in cheese. 4. Toss hot pasta with sauce and season with salt and pepper to taste; serve. Serves: 4
- MINT BALLS
4 oz crem cheese 2 cups icing sugar 1 cup fine coconut 1 tsp almond extract Soft mints Mix all ingredients but mints together, creaming well. Roll into balls. Place on waxed paper and press a soft mint into the top of each ball. Keep refrigerated.
- Cranberry Orange Muffins
1 egg Juice of 1 orange plus enough water to make 3/4 cup 1/2 cup Crisco Oil 2 cups of flour 1/2 cup of sugar Grated rind on 1 orange 2 teaspoon baking powder 1 cup chopped cranberries 1/2 teaspoon soda 1/2 teaspoon salt Cream sugr, egg, oil, orange rind, orange juice and water. Add dry ingredients and mix, then add cranberries. Bake at 400 degrees for 15 to 20 minutes - Makes 12 muffins

French Bread 1 dozen eggs 1 cup of milk 1/2 teaspoon of dry mustard Mushrooms, onions, green peppers, ham Use a 9 x 13 inch glass pan. Combine all ingredients and let soak overnight. Cover with grated cheese. Cook at 350 degrees for 1 hour.
- Ice Box Cake
6 oz. pkg chocolate chipits 1 pkg. mini marshmallows 1 egg, well beaten 1 cup icing sugar 1 Tbsp butter 1 tsp vanilla 1/2 cup walnuts 1 1/2 cups coconut, approximately, divided Sprinkle coconut in bottom of 9 inch square pan. Melt chocolate chipits with the tablespoon butter on medium heat until smooth then add egg, icing sugar, vanilla and walnuts. Remove from heat and add marshmallows, mixing well. Pour into the prepared pan and sprinkle remaining coconut over top. Refrigerate and cut in 1 1/2 to 2 inch squares.
- YO-YO COOKIES
1 can of Eagle Brand milk 2 cups of Graham Crumbs 1 x 6 ounce package of Chocolate Chips 1 cup of Cherries cut into small pieces 1 cup of cocoanut Mix milk, chocolate chips, cherries and graham crumbs together and roll into balls. Roll in coconut on wax paper.
- Italian Meat Pie
1 lb. extra-lean ground beef 1 cup mushrooms, chopped 1 cup green peppers, chopped 1 medium onion, chopped 2 tbsp. Italian dressing 1 1/2 cups tomato sauce 1 cup Italiano shredded cheese Pie crust or mashed potatoes Preheat oven to 400°F. Brown meat in a skillet. Stir in veggies and dressing. Add tomato sauce and cook 5 minutes. Remove from heat and stir in cheese. If using mashed potatoes, put meat into a casserole and top with potatoes. If using pie crust, put meat into deep dish pie plate and top with crust. Cut slits for steam to escape. Bake for 30 minutes or until top is golden brown.
- Beavertail Cheesecake
2 pkg. crescent dinner rolls 2 (8 oz.) pkg. cream cheese 1 cup white sugar 1/2 cup melted butter 1/4 cup brown sugar 1/4 cup white sugar 1 tsp. cinnamon Mix cream cheese and white sugar together. Mix brown sugar, white sugar and cinnamon together. In a 9X13 inch baking dish, place 1 layer of crescent rolls, then 1 layer of cream cheese mixture then 1 layer of crescent rolls. Pour butter (melted) over top. Sprinkle sugar/cinnamon mixture on top. Bake at 350°F for 25 minutes.
- Applesauce Cake
2 c. flour 1 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 1/2 cup butter 1 cup molasses 1 egg 1 cup applesauce 3/4 cup raisins 1/2 cup nuts (optional) Mix flour, salt, baking soda and cinnamon together. Set aside. Cream butter and molasses together; add egg and applesauce. Mix the dry ingredients with the wet. Add raisins and nuts, if desired. Pour batter into an 8X8 inch pan. Bake at 350°F for 40 minutes or until a toothpick comes out clean. Icing: 1 1/2 tbsp. lemon juice 3/4 cup icing sugar Mix lemon juice and icing sugar together. Ice cake while still warm.
- PASTA MUFFIN BITES
Oil a 12 cup Muffin Pan Cook 1 Cup of chopped mushrooms in 3 Tablespoons of butter over medium heat for 2 minutes. Then stir in 2 Tablespoons of flour ½ Teaspoon of garlic powder ½ Teaspoon of salt Black Pepper to season 1 Cup of milk until mixture thickens Remove from heat. Then Mix into above mixture 2 Cups of Cooked Macaroni 2 Cups of Cooked cubed chicken 2 sliced green onions 1 and ¼ Cup of grated cheddar cheese 2 beaten eggs. Scoop into muffin cups. Top with ¾ Cup of graded cheese and bread crumbs. Bake in a 400 degree F oven for 20 minutes.
