BANANA CINNAMON FRENCH TOAST

2 Large, very ripe bananas

1 cup milk

1 tsp cinnamon

¼ tsp nutmeg

4 eggs, slightly beaten

8 slices thick whole grain bread

3 Tbsp butter

Maple syrup


Directions:


Place bananas, milk, cinnamon and nutmeg in a blender or food processor. Add eggs and process until smooth.

Transfer mixture to a large square baking pan.

Add bread slices and turn occasionally until all egg mixture has been absorbed.

Melt butter in a large skillet over medium heat. Add bread in batches and cook until golden, about 3 minutes on both sides.

Serve with maple syrup.
