1 small onion, chopped
2 C sliced mushrooms
1/4 C butter
1/4 C flour
4 C chicken broth
1 C pumpkin
1 C light cream
2 tbsp. honey
Croutons
Sauté the onions and mushrooms in butter for 2 minutes. Stir in the flour. Add the broth & pumpkin and bring to a boil. Reduce heat and cook 20 minutes. Stir in cream & honey. When ready to serve, sprinkle with croutons.
